Stuffed Sweet Ramiro peppers with cream cheese

  • 2 sweet Ramiro peppers (makes 6 small wraps)
  • a large hand full of Rocket salads leaves
  • 90grms of cream cheese (or Philadelphia spread with chives)
  • Small bunch of chives
  • Salt and pepper to season
  1. Roast the peppers under a grill until they blister
  2. Remove the skin and any seeds
  3. Cut into strips approx. 2 inches wide (approx. 3 strips per pepper)
  4. Spread cream cheese (or use Philadelphia with chives)
  5. Sprinkle chopped chives
  6. Add  approx. 10 leaves of rocket salad leaves
  7. Season with Salt and pepper
  8. Then roll up the strip keeping in all the ingredients
